This makes this charcoal particularly suitable for long and controlled low & slow sessions. The temperature remains stable, you need to refuel less often, and you maintain maximum control over your cooking.

Why is hornbeam suitable for long cooking sessions?

Hornbeam is a hard and dense type of wood. After carbonization, it produces charcoal with a high carbon content, allowing the lumps to burn for a long time and evenly.

The addition of birch helps the blend ignite more easily. This lets you benefit from hornbeam's long burn time without having to wait unnecessarily long for your kamado to reach temperature.

Large lumps for optimal airflow

Good airflow is essential for a stable temperature. Small pieces of charcoal and dust can block the air vents in the firebox, making the fire more difficult to control.

The coarse grading of Birch Hornbeam leaves sufficient space between the lumps. Oxygen can therefore flow through the firebox more easily, and the temperature responds more precisely to adjustments in the air supply.

This is especially important for cooking sessions that last several hours and where temperature fluctuations should be prevented as much as possible.

To do this, open the air intake further and give the large pieces enough time to ignite completely. The good airflow then helps your kamado reach powerful and stable heat.

How to use Birch Hornbeam Charcoal

First remove excess ash from the kamado so that the air vents remain clear. Then fill the fire basket with the desired amount of charcoal, placing the largest pieces at the bottom. Distribute smaller pieces on top.

For a gentle low & slow cook, one lighting point is usually sufficient. Initially, leave the air intake open and start gradually restricting it well before reaching the desired temperature.

A ceramic kamado retains heat very well. It is therefore easier to let the temperature rise slowly than to cool down a kamado that is too hot.

Very long and stable burn time

Thanks to its high carbon content and compact pieces, Birch Hornbeam burns for a long time and evenly. As a result, you are less likely to need to add new charcoal during long cooks.

After cooking, close the lower and upper air intakes completely. The fire will then go out due to a lack of oxygen, and incompletely burned charcoal can be reused during a subsequent session.

Store the charcoal in a dry place and seal the bag tightly. Damp charcoal is harder to ignite, produces more smoke, and may burn less steadily.
